Stuffed Pepper Stew with Cheese & Leek Chicken Sausages

Our chicken sausages are so versatile and can be added or substituted in any recipe from pizza to soup!  This is one of our favorite hearty go to recipes!

Our chicken sausages are gluten free with no additives, no fillers and no bi-products.



1 cup uncooked long grain rice white or brown

4 cups of Chicken Broth (see our recipe for making your own broth)

1 lb Hidden Root Farms Cheese & Leek Sausage, casings remove

1 tbsp oil (I use grapeseed oil)

1 onion, chopped

1 Sweet Green Pepper, diced

1 Sweet Red Pepper, diced

1 can diced tomatoes

1 can tomato paste

2 tsp Hidden Root Farms Garlic Powder

½ tsp dried basil

¼ tsp dried oregano



Cook Rice according to directions on packaging in a separate pot.

Fry the chicken sausages in a large pan over medium-high heat and set aside.

Add the oil and onions to the pan and cook until clear (5 minutes).

Add the peppers to the pan and cook for 2-3 additional minutes.

Add all the seasoning and stir

Add the tomatoes, broth, and sausage and bring to a boil and simmer

For 20-30 minutes.

Add the rice, remove from heat and enjoy!
